 I always have such great expectations for the raw veggie and fruit intake I can coirse my boys to eat daily. So sadly, at the end of the week, there is always something lonely and mushy far in the back of our refrigerator. My husband’s first response is “dump it, babe”. But I really try not to waste. So when I can I like finding ways to utilize everything in whatever stage it’s in.
Pineapple and tomatoes overripe, yuk. I know I know. But fret not. Whip out that food processor and make a quick salsa. It’s easy and truth be told it’s better when the fruit and veg are softer.

Pineapple Salsa

1 overripe pineapple
4 ripe tomatoes
1 large onion
Few cloves of garlic
Squeeze a Lime
And a hand full of Cilantro
Salt to taste
Super easy
Note: I throw a habanero or 2 pepper in mine but I separate a portion for the muppets.

Directions:

Thow items in the food processor and boom you have Pineapple Salsa!
Serve with your favorite tortilla chips.
